Sangiovese is prized for its high acid, firm tannins and balanced nature. Savoury flavours of dark cherries and black stonefruit are characteristic, and may be backed by secondary notes of tomato leaf and dried herbs. Young Sangiovese has fresh fruity flavours of strawberry and a little spiciness, but it readily takes on oaky, even tarry, flavours when aged in barrels.
